Eric, You are incredible...not only are you a great chef, but you have a pleasant personality as well. Our guests from Pebble Beach raved about your meal and of course we knew we would blow the other two chefs out of the water! I was thrilled that my kitchen was spotless when we were finished. Julia was wonderful and of course Christina is my amazing housekeeper. As one guest said, "That was one of the best meals I've had." They're all fine folks and it was a pleasure entertaining them...thank you for all you did to present food at our dinner that married so well with our wine. We were set up with Eric on a "blind date" so to speak by a mutual friend to put together a wine dinner. We were to provide the wine, and Eric was to prepare the food to match. We were very impressed by the care and effort Eric took to pair each wine with just the right course and his openness and willingness to collaborate in this process. The very first time that I hired Eric to cater was a high powered day for me. I was giving a business luncheon at noon and a very important business dinner at 7:00 - both at our home. I had had the pleasure of having Eric's cuisine while he was still at the Calistoga Ranch, but this was a different cup of tea.
To make a long story short, he was brilliant. Both meals were not only interesting and delicious, but the food presentation was tantalizing as well. And, perhaps best of all, Eric was great to work with. He arrived at 10:30 a.m. and put away his last knife at 11:00 the same evening. It was very clear to me from the moment he arrived that he would do a superb job and that I could totally rely on him and put my focus on other details of the events. I highly recommend Eric!
I called Eric because I wanted to give my husband a special gift for his birthday...a private cooking class.
Eric showed up at our house with all of the food and equipment that we would need. He explained the full menu that we were all going to prepare together (six of us in all), then he divided up the tasks and we began cooking. He answered questions and continued to show and explain techniques. When we finished preparing the meal we all sat down to eat with some nice wine and conversation.
Ericʼs food is a wonderful combination of Italian and California cuisine. The whole night was very relaxed and we all learned a great deal. Needless to say the dinner was fabulous.

I had the best birthday party when you personally prepared one of my favorite meals; fresh steamed lobster with all the appropriate fixings outside on our dining deck. Everything was delicious!!
We have also enjoyed many of your wonderful creations at Calistoga Ranch over the past years. We have traveled well and have enjoyed many fine dining establishments, but we must admit that we find ourselves comparing everything back to Chef Eric.

Eric is a wonderful chef and very easy to be around. His food is divine. He has an amazing background and his technical knowledge is immense.
